We're receiving an eco-chef makeover in honour of Earth Day
We love good food, but treating ourselves comes with a responsibility – to be as sustainable as possible to reduce the impact we have on the environment. As a founding member of the Sustainable Restaurant Association, we aim to explore how new initiatives can be introduced to our restaurant to champion this whenever possible.
That’s where eco-chef Tom Hunt comes in. Inspired his innovative approach to sustainable cooking, we invited him in to collaborate with our Brasserie Head Chef Keir Barry to create brand new dishes inspired by the concept of Root to Fruit eating.
They put their heads together to craft dishes made from 100% whole foods, including the nutritious roots, skins and leaves of vegetables and meat served from nose to tail. The produce is seasonal and carefully selected from local and organic farms, and the spices and imported commodities are Fairtrade and picked from conservation projects and co-ops.
Launching on 22 April 2019, Earth Day, guests can enjoy these dishes that follow the philosophy of minimal waste and maximal nutrition. Featuring a range of produce used in innovative ways, from MSC-certified cod cheeks with lobster shell sauce to panisse made with English peas, these dishes show that eating mindfully can taste pretty good, too.

The dishes from the Tom Hunt x OXO collaboration will be available on the OXO Tower Brasserie All Day Dining menu from 22 – 29 April.
