Pop the cork with croissants and red berries for breakfast; pour it at celebrations picnics and garden parties in the sunshine; or serve it alongside charcuterie seafood salads or vegetable tempura when the evening draws in.
Taking inspiration from both Prosecco and Champagne Bollicine Rosé creates its own style as innovators like Serafini & Vidotto are wont to do. Although made using the Charmat Method (the process used for all those vivacious Proseccos that we love so much) the grapes are classic Champagne varieties and a little oak raises the level of luxuriousness even further. 90% Chardonnay is blended with 10% Pinot Noir that has spent 12 months in old oak barrels the secondary fermentation occurs in stainless steel tanks trapping all the youthfulness and aromatics. The colour of peach blossom Bollicine Rosé displays persistent and creamy Crémant-like bubbles combined with notes of blackcurrant sorbet wild strawberry pomegranate wild rose spice and toasted baguette. Spectacular and incredible value for money.
Francesco Serafini is the exuberant extrovert of this pair – winemaker connoisseur vine grower cellar master and raconteur. Antonello Vidotto is the quieter of the two most at home in his vineyards out of the limelight. But together these school friends have created one of Veneto’s finest wineries. Serafini & Vidotto was founded in 1986 at Nervesa della Battaglia beneath the ruins of an old abbey and this dynamic duo have been learning and loving their wines ever since.
