Warwick Estate’s vegan-friendly Professor Black Sauvignon Blanc 2021 comes from two blocks high on the Simonsberg in Stellenbosch. One was planted in 2003, but the other is much older having been planted back in 1985. Using these two very different plots adds complexity, texture and balance, with the intensity of the old vine fruit complemented by the explosive freshness of the Sauvignon Blanc from the younger vines.
