Waterford Distillery is the latest project from Mark Reynier the maverick who resurrected Islay’s Bruichladdich and turned into one of the most sought-after and pioneering whisky producers in the world. Based in a state-of-the-art facility originally built by Diageo for Guinness on the banks of the River Suir in the southeast corner of Ireland Waterford are creating some of the country’s most exciting malts. Inspired by his time in the wine industry Reynier pays close attention to the provenance of the barley working with 72 different Irish farms – some organic some biodynamic and all shaped by their distinct microclimates and soils. This is very modern terroir-driven Irish whisky (note the dropping of the ‘e’) and as such each bottle has a unique TÉIREOIR code (see what they’ve done there?) which can be entered on their website to uncover a wealth of information on the release including photographs maps and details on the harvest grower distillation and wood maturation.

The much-anticipated first release from this exciting new operation is a range of Single Farm Origin whiskies showcasing the very different flavours of barley grown during the 2015 season – an exceptional vintage for fine wine around the globe but also for barley in Ireland apparently.

Ballymorgan Edition 1.1 was distilled in 2016 from Overture barley grown by fifth-generation farmer Robert Milne in the rain shadow of the Wicklow Mountains County Wexford. Waterford have fallen in love with the spirit from Robert’s 2015 barley. They’ve matured it in a combination of first-fill American oak French oak and ex-Vin Doux Naturel fortified wine casks before being bottled without colouring chill-filtration or additives. Only 9 000 bottles were released of which very few made their way over the Irish Sea and the majority have sold out long ago. Expect crunchy green apple pear rhubarb and vanilla custard lemon barley water Maltesers After Eight Mints Bassetts Liquorice Allsorts caramel and the tingle of cloves. As the inaugural release from Ballymorgan this is already a collector’s item and with its nostalgic flavour profile it’s one our favourites in the series so far.
