Only 1,500 bottles of this limited edition were made, and it takes amaretto to a whole new gourmet level. Adriatico start with a base of their Roasted Almond Amaretto, which is crafted using half the sugar of classic amaretto, almonds that are picked by hand and carefully roasted for hours, vanilla, cinnamon, cocoa, coffee and a pinch of salt from Margherita di Savoia on the Adriatic Sea. They then aged it for twelve months in three Caroni rum casks that were rescued by Luca Gargano, owner of Velier.
For those not familiar with Caroni, it is the Karuizawa of the rum world. Trinidad was once home to over fifty distilleries, but now only Angostura remains. One of the most famous distilleries to be lost was Caroni. Established in 1918, Caroni was famed for supplying the British Navy with its full-bodied and full-throttle rums, made using its own Trinidadian sugar cane. However, it was sadly closed in 2002 and then demolished. The heavy rums that were saved now top the bucket lists of all collectors. So, any spirit that has come in contact with Caroni is now a piece of history.
This additional maturation in those precious rum casks has layered cola bottle sweets, cinnamon, clove, black pepper, caramel, petrol, tar, leather, liquorice and warmth over the notes of salted nuts, sweet almond butter, homemade marzipan, honeycomb toffee, spiced coffee and that delicate hint of cherries (geeky side note: one of the major compounds that makes cherries taste the way they do is benzaldehyde, which is an almond-like flavour).
Don’t expect the sticky and heavy taste of old-school amaretto, this is a fresh new generation made entirely in Puglia, Italy. This artisan amaretto is drier and far more complex than its rivals. The provenance of the barrels and ingredients, the intricate roasting and that pinch of salt are the epicurean touches of a bartender’s dreams. It’s going to create the most incredible Amaretto Sour, French Connection or Godfather cocktails, but we’d recommend sipping it neat over ice to revel in the purity of its beauty.
For Jean-Robert Bellanger, the dream to create Adriatico began when his Italian mother prepared his favourite dessert, tiramisu, with a dash of amaretto. So, he set out to create 100% natural ingredients amaretto that would showcase the Filippo Cea almonds grown in Puglia. The bottles pay homage to this beautiful area of Italy: the shape is based on the geometry of the stunning Castel del Monte, the colour highlights are inspired by the crystal blue waters of the Adriatic Sea and the golden sunshine that bathes the surrounding countryside, and there’s even a trullo on there. For this edition, they’ve also included an orange and black label in homage to Caroni’s old rum branding.
