Bishop is the maiden name of Ben Glaetzer’s mum Judith. In her honour the family created this elegant expression of Barossa Valley Shiraz. The grapes come from super-old vines in Ebenezer which gives the wine an almost unparalleled complexity and concentration. Matured in oak for 16 months this red can be matured of 10-15 years but it’s already hard to resist. When you open it, you’ll discover that Bishop is a dark and brooding drop with notes of crème de cassis coffee bean, dark chocolate, plum crumble, blackberry jam, black olive, black cherry, black pepper, baking spices and smoke. They love pairing this wine with chargrilled griddled or roasted foods on cold winter nights. Just remember that when you pass it across the dinner table Bishop can only move diagonally.
The Glaetzers settled in the Barossa Valley in 1888, so they know a thing or two about the area. They’ve carved their niche in the sub-region of Ebenezer where – in their five star-rated winery (James Halliday’s Wine Companion) – they make what Matthew Jukes has called: “Silky textural and layered… extremely serious wines.”
