Just outside the village of Maury, northeast of Perpignan, you’ll find the wine cellar of Mas Amiel. It was originally called Domaine de Goudous, but the name changed when the Bishop of Perpignan lost his vineyard during a game of cards with an engineer called Raymond Etienne Amiel.
Specialists in Grenache, Mas Amiel are most famed for their Vin Doux Naturel, Maury. This sweet, oxidised and fortified wine is made by fermenting the grapes in large vats, then adding extra alcohol halfway through, and leaving it all to steep for more than two weeks. It’s then aged in regularly topped up tanks for around 10 months before bottling. The old vines and unusual ageing process create a punchy and powerful dessert wine that is rich with blackberry, fig, raspberry, cherry, dark chocolate, liquorice, spice and vanilla flavours.
