DAFTMILL Summer Release Lowland Single Malt Scoth Whisky 2011

The small but impressive Daftmill farm distillery is owned and operated by the Cuthbert family, producing whiskies in the quieter periods and only in small cask numbers. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland Whisky. With a strong emphasis on locality, renewables and sustainability, there isn’t much that goes to waste. A nearby brewer provides Daftmill with its spent brewer's yeast, used grains from the mash are fed to the farm’s cattle and distillation leftovers are spread on the fields as fertiliser. Water is sourced from the estates own spring and aside from Scottish made copper stills, most other things are produced or sourced within 5 miles of the farm – this really is an incredibly resourceful and self-sufficient distillery.
The whisky that went into this Summer Release came from twenty-seven first fill ex bourbon barrels, which were filled in June, July and August 2011. Then stored in their dunnage warehouse until bottling in September 2023.
