Dalmore’s 12 Year Old Sherry Cask Select is aged in American white oak before being finished in Sherry casks. Now many distilleries talk about ‘finishing’ and more often than not this means anything from a couple of months to a year. Not for Dalmore though, rumour has it that this Scotch spends up to three years in Sherry casks. And not just any Sherry casks. These are barrels that held a unique Sherry created especially for Dalmore using a blend of classic and aged Oloroso and rich and sweet Pedro Ximénez. It was made specifically to enhance their house style. The whisky is then bottled at a higher ABV than the standard 12 Year Old giving it even more oomph.
What you pour into your glass pulses with caramelised orange, gingerbread, Black Forest gateau, sultanas, walnuts in honey, roasted almonds, dark chocolate, cinnamon, vanilla-laced crème brûlée, mango, pomegranate, toffee, plum crumble, marmalade and hot cross bun. A masterclass in the use of Sherry and a decadent masterpiece to sip into the wee hours.
As regal resplendent and undeniably Scottish as the silver stag emblazoned across their bottles is, Dalmore is nothing short of legendary. Early owners of this distillery in Alness just north of Inverness came from Clan Mackenzie. Each bottle of Dalmore bears a twelve-point stag in honour of the Mackenzie’s Chief Colin of Kintail who famously saved King Alexander III of Scotland from a charging buck and was rewarded the right to use this royal emblem. Fortune favours the brave apparently and if you’re looking for Dutch courage this is a delicious way to obtain it. Especially considering the whiskies are made under the watchful eye of the iconic Master Distiller Richard Paterson a man so skilled that he once insured his nostrils for £1.6 million with Lloyd’s of London. The wonderfully mahogany Scotch he and his team produce at Dalmore is rich and full-bodied making it the ultimate postprandial dram and a perfect partner to a cigar.
