The Dalmore 40 Year Old 2022 Edition sees three woods before being filled into that exquisite decanter and slipped into its mirror-lined box. 

Initially matured in ex-Bourbon casks made from American white oak it’s then transferred into 30-year-old Matusalem Oloroso casks from González Byass – one of Spain’s most famous and respected Sherry bodegas. Then it was blended with a second spirit that started life in ex-Bourbon barrels before moved into Graham’s Port Colheita pipes from 1970. Sherry Port Bourbon and Scotch all come together to create a deeply indulgent super smooth and unfathomably complex dram.

Sip it to discover cherry liqueur chocolates caramelised apple Polish plum pierniczki (those moreish chocolate-covered gingerbreads with the plum filling) walnut baklava vanilla-laced crème brûlée sticky marmalade pudding Christmas cake Black Forest gateau and poires belle Hélène. It’s like the dessert trolley of our wildest dreams. Another timeless classic from Richard Paterson OBE – a whisky maker so skilled that he once insured his nostrils for £1.6 million with Lloyd’s of London. He calls it “a tapestry of tantalising delight.” And we’re not going to argue with that.

Early owners of Dalmore came from Clan Mackenzie. Each bottle of Dalmore bears a twelve-point stag in honour of the Mackenzies Chief Colin of Kintail who famously saved King Alexander III of Scotland from a charging buck and was rewarded with the right to use this royal emblem. Fortune favours the brave apparently and if you’re looking for a little Dutch courage then this is the most luxurious way to obtain it.
