The Grand Cru of brandy.

In 1990 Domaine Trapet revived an ancient tradition of using their grapes to create a spirit. Where others may have chosen to focus on the higher yielding lesser terroirs Domaine Trapet use their flagship Grand Cru vines in Chambertin. The Pinot Noir grape skins pulp and seeds leftover from making their top wine are pressed once again and then distilled. This spirit is then aged in oak barrels. The copper-hued elixir that’s drawn from these rare casks is every bit as good as XO Cognac or an old Single Malt Scotch displaying prunes antique leather books rich truffle dusty stately home libraries Christmas cake vanilla allspice juicy grapes and dried red fruits. Powerful and complex this Marc de Chambertin 1996 can be sipped neat at the end of a meal or makes a wonderful accompaniment to chocolate desserts praline or fruitcake.

Trapet is one of Burgundy’s legendary names. Neighbouring titans such as Armand Rousseau and Dugat-Py Domaine Trapet has been passed from generation to generation since the late-1880s. They hold a special place in the region’s history with many crediting them as actually having save Burgundy. When phylloxera swept through Europe destroying vineyards Louis Trapet believed that grafting the vines onto more resistant root stock might be the answer however this practice was illegal at the time. So he sneaked out in the dead of night and began the laborious process of grafting his vines in secret. His vineyards were some of the only ones to survive and shortly after grafting was legalised. Disappointed by the chemicals and metals still permitted by organic farming this progressive winery to became biodynamic in the mid-1990s. The result has been a much greater sense of terroir. The wines produced here are not as big and flashy as some of their neighbours Domaine Trapet’s style is far more graceful pure and aromatic with great potential for ageing.
