Pithon Lais Blanc 17

Visitors to St. JOHN Restaurant in London will probably have encountered this delicious biodynamic white, as it has been a favourite on their wine list for a long time. 

Olivier Pithon’s Cuvée Laïs is named after a friendly Jersey cow in Catalan country. As adorable and approachable as its namesake, this white wine is created using a mix of Macabeu, Grenache Gris and Grenache Blanc, which are fermented separately and then blended in large oak barrels. What emerges is a crisp white with prickly notes of white pepper, salty beach pebbles, white flowers and citrus sorbet. That seasoning of flavour makes it an immensely food-friendly wine.

Olivier Pithon is the brother of Jo Pithon from the Loire’s Pithon-Paillé. Trained in Bordeaux, in part by Stéphane Dereoncourt, he fell in love with the Pyrenees-Orientales region and has become one of the area’s most exciting producers. You’ll find this dynamic winemaker in Calce, just outside Perpignan, wedged between the Mediterranean Sea and the Pyrenees and Corbières Massif mountain ranges.
