It was created by carrying out a secondary infusion in a combination of American and French oak barrels filled with locally sourced hand-harvested holy basil lemon verbena and rosemary. This process layers citrussy and herbaceous highlights over the classic juniper and imparts richness and smoothness in a way that only barrel-ageing can. Established and run by the Dilawri family Filibuster Distillery is a refreshingly different enterprise with an industry dominated by white men for being owned by a woman from a minority background. Having amassed decades of experience within the speciality spirits retail industry the Dilawri family had become quite an opinionated bunch. So inspired by both old-school Scottish traditions and the pioneering craft scene they decided to build their own distillery. The name Filibuster comes from the unique American political process of delaying or preventing a Senate decision by speaking continuously and “talking a bill to death”. The distillery chose this name because it was born in Washington D.C. before moving to Shenandoah County in Virginia; they sometimes find the political discourse within the nation’s capital comedic so wanted to lampoon it a little; they are also uniquely American; and because they aren’t afraid to express their opinions.
