This dry and nutty Amontillado is drawn from a solera* with an average age of 30 years old. The solera was started way back in 1857 by the Duke of Medinaceli hence the name ‘Del Duque’. 

Expect salted caramel toasted almonds roasted hazelnuts dried apricots golden raisins polished antique wood leathery fig sea salt speculoos spice furry peach skin and walnut baklava without the sweetness. Consider pairing Del Duque 30 Year Old Amontillado with salted nuts cured meats and fish or even game. 

* A complex way of maturing not just Sherry but also rums brandies and vinegars. The solera system is a series of barrels with the oldest on the bottom and the youngest on the top. Sherry is bottled from the bottom row that row is then topped up from the next oldest on the level up and so on up the system the gap at the top is then filled with new Sherry. This fractional blending ensures continuity and consistency but also that the youngest wine have less influence.
