Grown opposite the Côte des Monts Damnés, the Pinot Noir grapes in this Sancerre rosé wine are all hand-harvested before being cluster-pressed to conserve the quality of the grapes. After pressing, the press wines and light pressings are separated to retain only the remarkably delicate second pressings. The wines are then aged on their lees in stainless steel vats for four months to steadily reveal their expressions.
