The maturation of cooked must and aged wine vinegar in small oak casks over several years has revealed a creamy, fragrant and exquisitely balanced elixir with a pleasantly sweet and sour tang. It can be drizzled over soft cheeses, Italian gelato or even enjoyed on its own at the end of a meal.
Il Borgo del Balsamico is a business run by two sisters, Cristina and Silvia Crotti, whose ethos is to bring supreme quality to the traditional balsamic vinegar market. Rejecting the need for labelling the vinegars with a particular number of years of ageing, they have instead focused on giving the consumer direction, with colour coding, on how and when to use them resulting in a fuller and more elevated experience.
