Doocot was distilled, matured and bottled at the family-owned Kingsbarns Distillery in the Kingdom of Fife. 

This Lowland Scotch is Kingsbarns’ new flagship whisky, and it was crafted using barley grown within a six-mile radius of the distillery. Production Director Isabella Wemyss selected a combination of ex-Bourbon and exceedingly fashionable STR (shaved, toasted and re-charred) ex-Portuguese red wine casks. These are quite gentle casks, which add fruit and a touch of sweetness, but without overwhelming all that wonderful Fife terroir and provenance.

Each time Kingsbarns release a slightly older expression, we fall a little bit deeper in love with them. Doocot is intensely fruity with aromas of wildflowers, soft brown sugar, banana bread and tropical fruit. On the palate you’ll discover tinned pineapple syrup, strawberries and cream, rhubarb fool, kiwi fruit and freshly grated citrus zest. All that fruit makes it a super-approachable and summery dram, and one that might even tempt a few rum fans to give it a go. It’s screaming out to be sipped as a sundowner or mixed into a highball. 

The Wemyss family have a long history with Scotch whisky, as John Haig built his first distillery on their land at the beginning of the 19th Century. Their new venture started out as a derelict Georgian farmstead, which has been lovingly converted into the glamorous Kingsbarns Distillery. This new Lowland whisky producer draws its water from an aquifer 100 metres below the distillery, the Laureate barley is grown in Fife and is completely unpeated (the environmentally conscious choice of many new distilleries), and the wood policy was directed by the late, great Dr Jim Swan, a celebrated whisky maker who was described as “the Einstein of whisky” and who was instrumental in setting up a raft of other great distilleries, including Nc’nean, Filey Bay, Cotswolds, Kavalan, Penderyn, Kilchoman, Victoria Caledonian and Milk & Honey. Kingsbarns Distillery is located deep in golf club country on Scotland’s tempestuous east coast. So, it will come as no surprise that their whisky makes a fine choice after a windy eighteen holes.
