Generally when a white wine is made the time the juice remains in contact with the skins is minimised to keep the wine light and fresh. If you extend that skin contact the wine becomes fuller bodied more tannic and amber in colour; orange wine. And this hot new trend is attracting many admirers. Litmus’ orange wine is made from 100% Bacchus left to rest on the crushed skins for four weeks without sulphur dioxide. This is a little less than previous vintages creating a wine that is crisp youthful and energetic but has that wonderful orange wine funk to it. Quite different from most Bacchus – which tends to display vibrant elderflower gooseberry and almost Sauvignon Blanc-like character – this is packed with crunchy pear grapefruit pith fennel clementine box tree quince jelly hazelnut matchstick marzipan and vanilla. Made in tiny quantities it can be enjoyed with fatty meats creamy and spicy dishes like Thai curries nutty salads or quinoa and maybe an episode or two of Orange is the New Black. Or should that be orange is the new white?
Litmus Wines is without doubt one of the most exciting producers in England. Where most vineyards have concentrated on sparkling wine production Litmus focus solely on still wines selecting small parcels of fruit from prime vineyards in the south of England. Attention to detail is high with all fruit being hand-picked and wines being lees aged and matured in French barrel before release.
Australian John Worontschak has been making wine in England since 1988. Following stints working at Aussie legends such as Penfolds Yalumba and Campbells of Rutherglen he and his family settled in Notting Hill Gate. He makes wines at Denbies Wine Estate consults all over the world and is a panel chairman at the International Wine Challenge. He created Litmus who try and steer English wine towards a more complex balanced and sophisticated style.
