Lottie Shaw’s award-winning Yorkshire Parkin Cake is made to a traditional family recipe that’s over 100 years old using flour, oatmeal, black treacle and syrup. A regional sticky ginger delicacy, one of the good things about this Yorkshire Parkin is that the treacle in the recipe caramelises and hardens during baking but, in keeping with tradition, before it leaves the bakery it’s kept to rest to allow it to 'come again' - this is where the caramel softens giving each piece the perfect crumbly stickiness.
