This astonishing Mezcal is one for Islay whisky fans. Medicinal notes whirl around with something like peat smoke layered on top of which are green apple skins lime garden mint salted caramel cream and roasted agave.
As it’s definitely one to sip neat we’ve decided to celebrate its gorgeousness by throwing in a free glass from which to enjoy it. We recommend doing so alongside Puebla’s traditional dishes such as mole poblano and chiles en nogada or some nopal tacos with smoky salsa.
Mezcales de Leyenda’s Puebla as the name suggests is a Mezcal Blanco from Puebla in eastern central Mexico home of El Cinco de Mayo because this is where the Mexican Army defeated the invading French troops on the 5th May 1862. It was made by Don Aaron and his father Don Federico Valentín Alva Ibañez using the round and flat-paddled Agave Potatorum (known widely as Tobalá and locally as Cenizo). It takes between eight and eleven years for these great wild agaves to mature and you need more than ten of those plants to make a single bottle of Mezcal; that’s before you even start the process of roasting in a lava rock pit crushing slow fermenting and double distilling in a copper alembic.

As well as supporting some of Mexico’s most marginalised communities and working with institutions who protect the Mexican countryside they’re fair trade ensuring reasonable wages for their workers. Where they use wild agave they only select ones deemed sustainable by SEMARNAT (the Mexican Department of Forestry) and where they use farmed agave they only work with growers who replace at least one plant for every one they harvest. Even the bottles are made from recycled glass and paper before being stoppered with a certified natural cork. In 2005 Mezcales de Leyenda opened the very first bar in Mexico City dedicated exclusively to artisanal Mezcal this is a producer at the very cutting edge of this category.
