This Single Pot Still Irish Whiskey is the 2nd edition from Redbreast’s Iberian Series which pays homage to the sun-drenched bodegas of Spain and Portugal. Aged between 8 and 10 years, this expression points to the fruity notes of Portuguese fortified wine and has been recasked and finished in a collection of Tawny Port Hogsheads barrels.
Its warming confectionery aromas of buttered pasty with praline and dried cherry mingle with delicate herbs and floral honey. With notes of chocolate coated hazelnuts and salted caramel, the palate is rich and nutty at first, followed by flavours of fresh plums and dried figs that balance the tannins for a luscious and creamy texture. The finish lingers as pot still spices and fruits fade, leaving the tawny seasoned oak as a reminder of the casks.
Redbreast is a living legend of the Irish whiskey scene. Made from a mash of malted and unmalted barley that’s triple-distilled in a traditional copper pot still it first appeared in 1912 when Gilbeys began selling a whiskey distilled by Jameson’s that they had matured for 12 years. Although production ceased in 1985 it was soon re-launched due to popular demand and is now better than ever.
