Wabi-sabi is a concept in Japanese aesthetics centred around finding beauty in the transient and the imperfections. It’s the flaws that make something unique. If something is perfect or complete can it ever truly be magnificent?
That’s also the idea behind Difetto Perfetto meaning ‘perfect flaw’. This is a fleeting Prosecco made in tiny quantities. It will change each vintage and it hasn’t been ‘completed’ in quite the usual way creating a unique and beautiful experience.
Most Prosecco is made in pressurised tanks following a method devised by Federico Martinotti in 1895 before being clarified until crystal-clear. Difetto Perfetto however is briefly fermented in tanks before being filled into bottles where it undergoes a second fermentation much like Champagne. The spent yeasts called lees are left in the bottom of the bottle (a style often called ‘Col Fondo’ meaning ‘with the bottom’) where they impart spicy and toasty notes plus a creamy texture. Unusually those lees are left in the bottle resulting in a hazy wine; gently inverting it like a snow globe will enhance the buttery and spicy flavours and cloudy appearance.
In fact this is really two wines in one. Pour it carefully and the sediment stays in the bottom giving a crisp and fresh wine. Gently shake it to mix the sediment though and you get something richer and creamier. We love to pour the first glass as a refreshing aperitif without disturbing the sediment then gently swirl the bottle and enjoy the fuller style with food. Dramatic floral and fabulous; this old-vine natural style will appeal to fans of the cult Pét-Nat movement and might change the way you see Prosecco forever. It’s perfection in our eyes.
