Valdaya is made by a couple who studied in Bordeaux under the world-renowned oenologist Professor Denis Dubourdieu and worked all around the world before returning to Spain. They pick the grapes from approximately 60-year-old, low-yielding Tempranillo vines and mature the wine in oak for 15 months. With immense ageing potential, this is just a baby at the moment, but it’s already brimming with juicy black fruit, oak spices, smoked meat, balsamic and velvety dark chocolate.
