Introducing the world’s first Biodynamic Single Malt: Waterford Luna 1.1.

Waterford’s Arcadian Series is a celebration of the radical barley growers and maverick farming philosophies that put flavour above crop yield. Waterford Luna 1.1. is the latest expression in the saga and explores the eccentric world of biodynamics. This trend has been all the rage in wine for a while now but this release is a landmark for whisky.

Biodynamics is an alternative form of agriculture based on the ideas of Rudolf Steiner. It incorporates an uber-organic and regenerative approach with the cycles of the moon and additional spiritual and mystical elements such as burying quartz-stuffed cow horns to attract cosmic forces. Although labelled pseudoscience by some it can have spectacular result in wines. And judging by Waterford Luna 1.1 the same applies to whisky.

This is the whisky that Waterford Distillery has been champing at the bit to make for a while now. It was crafted using biodynamic malted barley that was harvested in 2017 at three Irish farms run by Trevor Harris John McDonnell and Alan Mooney. Distilled in 2018 Luna 1.1 has been matured for three years and two months in a combination of first-fill American oak virgin American oak premium French oak (most of which came from Château Lafite Rothschild) and Vin Doux Naturel (Port and Amarone) casks.

If you’d like you can wait until the moon is in just the right place to taste this whisky. Seriously there’s a lunar calendar that predicts the most auspicious days for wine tasting and we assume the same logic applies to whisky. Alternatively crack on into it whenever you fancy and revel in its otherworldliness. Rich and oily with notes of plum apricot jam grapefruit sorbet freshly turned soil lemon drizzle cake fresh mint tea hay draff pepper cloves milk chocolate marzipan pizza dough digestive biscuits and honey. Surprisingly spicy and deeply complex; we’re over the moon with Lunar 1.1.

Driven by terroir and provenance and obsessed by the finest of details Waterford Distillery looks set to become the next ‘big thing’ in highly collectable whisky. It’s the latest project from Mark Reynier the maverick who resurrected Islay’s Bruichladdich and turned into one of the most sought-after and pioneering whisky producers in the world. Based in a state-of-the-art facility originally built by Diageo for Guinness on the banks of the River Suir in the southeast corner of Ireland Waterford are creating some of the country’s most exciting malts. Inspired by his time in the wine industry Reynier pays close attention to the provenance of the barley working with 72 different Irish farms – some organic some biodynamic and all shaped by their distinct microclimates and soils. This is very modern terroir-driven Irish whisky (note the dropping of the ‘e’) and as such each bottle has a unique TÉIREOIR code (see what they’ve done there?) which can be entered on their website to uncover a wealth of information on the release including photographs maps and details on the harvest grower distillation and wood maturation.
