Stunning stylish and summery Wiston’s Blanc de Blancs Non-Vintage is an exceptional wine for all occasions but particularly for pairing with freshly shucked oysters or while picnicking in an orchard.
Wiston Blanc de Blancs NV is a composition of many vintages blended together. The estate first began reserving wine for this purpose back in 2009. The grapes were pressed through a traditional Coquard basket press (like those used in Champagne) the juice was then fermented in a combination of stainless steel and Burgundy barrels. The second fermentation occurs in bottle and it was aged on the lees (the spent yeast that imparts the yeasty nutty creamy and bready flavours) for two years before disgorgement. Expect lots of crisp green apple and vibrant acidity alongside delicate notes of kumquat lemon curd flint and beach pebbles.
It was made by the Irish winemaker Dermot Sugrue who has worked at Nyetimber Château l’Eglise-Clinet and Château Leoville Barton not to mention stints in Champagne. The Independent describe him as “the man who put English sparkling wine on the map” Decanter says he “is playing a big part in shaping the UK sparkling wine industry”; and if you dig a little deeper you find he is involved with the highly respected wines from Jenkyn Place Digby Fine English Sugrue Pierre and many others.
The Goring family has owned Wiston Estate on the South Downs since 1743 but it was Pip Goring - inspired by the vineyards around Cape Town where she grew up – who pushed for planting a vineyard in 2006. There’s a magic in the wines that Dermot Sugrue produces; when combining that with the Gorings’ passion and heritage and Wiston Estate’s chalky soils (which are much like those of the Côte de Blancs in Champagne) you have a very serious wine on your hands.
