It’s made from what is rumoured to be Europe’s largest crop of Apothecary rose an ancient and medicinal flower that has been used for tinctures and tonics ever since it was brought to the UK by the marauding knights of the Crusades. In 2012 the husband-and-wife team of Hamish and Liberty Martin – an ex-wine merchant with a first-class diploma in Herbology and a trained beekeeper with a penchant for antiques – bought a derelict plot of land at the foot of the Pentland Hills on the outskirts of Edinburgh. Over several years they transformed that wasteland into The Secret Herb Garden which is now home to over 600 naturally and sustainably grown and tended to plants. Although it was never their intention in 2017 they launched an acclaimed range of 100% natural flavour gins which rapidly became bestsellers at Harvey Nichols.
